This anaerobic natural Caturra is packed with ripe cherry, red currant and cacao nibs. It has a full, boozy body with plenty of sweetness, without tipping into heavy fermentation. Vibrant on filter and especially playful as espresso.

From one of our favourite farms, Villa Betulia. If you’ve been around Blue Sky for a while, you’ve probably seen a few lots from this farm already. We’re big fans of producer Luis Anabel and his ability to deliver exceptional coffees across a wide range of varieties and processing styles. This time around, we’re working with a natural Caturron.
This is a sweet, jammy coffee that we’ve been loving on filter and on bar. In the cupping bowl we’re tasting cherry, red currant and cacao nibs. As espresso it’s been especially fun, pulling shots that remind us of a certain cherry-flavoured chocolate bar ;). There’s a big, boozy body here, but with plenty of control and finesse. It’s not overly fermented or funky, which can sometimes be the case with anaerobic naturals.
Typical of high-quality natural Colombians, the beans are large and soft, making them very easy to extract. We’re roasting this lot very light and still achieving full development and great solubility. We’d recommend starting a little coarser on the grind and adjusting from there.
