How long does coffee stay fresh?

A common misconception is that coffee is at its best when extremely fresh. Roasted coffee needs a few days to off-gas carbon dioxide that builds up during roasting. In addition, volatile compounds such as methional which are not pleasant are found in high concentrations immediately after roasting. Giving the coffee some time to rest before drinking will allow these volatile aroma compounds to dissipate and reveal a much sweeter and cleaner cup. We find our coffees peaking in sweetness and flavour between 1-4 weeks of age.

For our blends we recommend consumption within 4 weeks after roasting. In this time-frame espresso roasts will stay fresh, produce thick crema and keep an intense rich flavor. Our lighter roasted single origin coffee's can sometimes benefit from longer resting times and we have even noticed some coffee's peaking in sweetness and juiciness after 4 weeks.

Freshly ground vs pre-ground

While we do offer a complimentary pre-grinding service, we highly recommend anyone drinking coffee at home regularly to consider investing in a grinder. There are two reasons why we recommend this, consistency and flavour.

Because grinding coffee exposes much more of the coffee's surface area to the air ground coffee will expel gasses and aromatic compounds much quicker than whole beans. This means pre-ground coffee will lose flavour much faster and will lose the c02 required to form a thick crema when made as an espresso.

Another problem with pre-ground coffee is the lack of consistency. There is a large diversity of brewers and espresso machines out there and unfortunately many manufacturers produce cheap (and sometimes expensive!) home espresso machines that are simply incapable of maintaining the pressure, temperature and flow rate needed to make espresso. This means it is incredibly difficult to guarantee that a given grind setting on our commercial grinders will match what is needed for your espresso machine. At Blue Sky we use a Breville Barista Express for dialing in all our home espresso recipes. If you select a pre-ground espresso option, you will receive coffee which is ground to match these recipes.

When does Blue Sky roast?

We roast on Tuesdays and Thursdays.

All orders are processed within seven days of receiving your order. Typically the coffee will leave sooner than that though.

If you are particularly concerned about the coffee getting to you fresh order on Wednesday for Thursday dispatch.

How do I track my parcel? 


At time of shipment, you will receive 2 emails from us.

1. Fulfillment email containing your tracking number acting as confirmation of shipment for your order.

2. An additional informative email reminding you of your tax/duties implications on your parcel (if any) including additional tracking links relevant to your country.

You will also receive a separate email from our shipping partner, confirming creation of your shipment.

This email will also usually contain your tracking information.

How do I know my order has been fulfilled/shipped?

Once your order is dispatched, an automatically generated email from our shipping carrier is sent to your email address containing the tracking information for your parcel. Furthermore, you will also receive a fulfillment email from our online store confirming the shipment of your order.

I didn't receive my order confirmation email?

Please ensure to check your junk/ spam folders in case our emails are not successfully being delivered to your inbox. Or, you may have misspelled your email address during the checkout process - if this is the case, please contact us to correct this.

When will you ship my order?

Orders are processed and shipped Tuesday and Thursday between 8:00am & 4:00pm AEST, excluding weekends and public holidays. The best time to order is at the start of the week so that we can schedule our roast days accordingly. Please note if you order after Wednesday your order will most likely not be processed until the following week.

I need to change something on my order, how can I do this?

Yes, we can amend your order prior to having the order fulfilled and shipped. Please contact our customer care team as soon as possible, to ensure we have the change actioned.
