Cherries, Red Fruits, and Honey

A refreshing fruit forward espresso. We like to pull this one out a bit longer to tame the acidity on this light roast.

This blend was developed last year in direct response to rising coffee prices—which, while probably for the best, hit fruity coffee lovers hard as top-shelf, fruit-forward beans skyrocketed in cost.

Blue Sky did not sit idly by. While some products increased in price, our $25 range of single-origin stunners remains the gold standard for 250g single-estate coffee in Brisbane. At the same time, we introduced an affordable, fruity blend: Cherries Collide.

Cherries Collide is crafted to combine seasonal coffees with limited availability, consistently delivering a vibrant red-fruit flavour profile. It sits at a highly accessible price point, and unapologetically embraces the purpose of blending: making premium coffees go further. Our blend pulls from a range of beans—some with complex, ferment-heavy, and time-intensive processes favored by farmers—as well as regional lots chosen specifically to achieve that bright fruit character.

The coffees featured in Cherries include Riverina Estate from India, known for its experimental, funk-forward ferments; El Indio from Colombia, a regional lot processed naturally on raised drying beds akin to Ethiopian standards; and Nicaragua Carbonic Maceration Fermentation Bourbon, among others.

Cherries is also the most versatile of our blends for filter coffee drinkers—an omniroast that shines in a V60, delivering notes of berries, red apple, and black grapes on the nose and palate. It finishes with a long, lingering sweetness reminiscent of canned apricots. For espresso, this light roast works beautifully in home espresso machines and steams up into a strawberry milkshake-like treat when combined with milk. Unlike many single origins, Cherries is available year-round, so you won’t need to adjust your recipe much between bags.
