This washed Ethiopian coffee is a special preparation lot selected from smallholder farmers and processed separately at the Arsosala washing station. It’s a beautifully clean light roast with a balanced sweetness, zippy citrus acidity, and aromatic notes of earl grey, lemongrass, and orange zest. One of the three Ethiopians we brought in to kick off this years Eth Harvest. While the other two Ethiopians were rare single farmer lots this one is a stand out special preparation coffee from a select number of small-holder farmers. The "Special Prep" process is a premium selection from which is picked under more strict conditions. This is a more labour intensive coffee than the a standard Grade 1 Ethiopian as it requires at least 90% fully ripe cherry, allowing a maximum of only 5% semi-ripe and 5% overripe cherries. This is achieved using "day picking" where extra resources will be put into picking the best selection of cherries in a single optimal day. The participating farms will have their lots blended and processed separately from other lots from the Arsosala washing station.

We find this coffee to be an exceptionally high quality washed Ethiopian, with a balanced sweetness and delightfully clean profile.

This coffee is a strong showing of the classic washed Ethiopian profile. Light weight with a lingering aftertaste, very aromatic with earl grey and lemongrass, and a zippy citrus acidity that keeps things fresh. The special preparation is really showing here, we are finding a low rate of defects such as quakers and this coffee is a very consistent performer which brews well across all methods.
